Refined recipe for chicken tagine with preserved lemon

INGREDIENTS FOR 4 PEOPLE

Here are the elements needed to prepare this delicious tagine:

  • 4 chicken thighs
  • 1 red onion, finely chopped
  • 2 cloves of garlic, peeled and chopped
  • ½ candied lemon (zest in strips, seedless and crumbled)
  • 3 cl of lemon juice
  • 1 tablespoon chopped parsley and coriander
  • 3 cl of olive oil
  • 10 g of powdered ginger
  • 4 g of turmeric
  • ½ g of saffron
  • Salt and pepper
  • 100 g pitted green olives

PREPARATION OF CHICKEN TAJINE WITH PRESERVED LEMON

Start by preparing a marinade by combining olive oil, lemon juice, saffron, turmeric, ginger, pepper, minced garlic, preserved lemon pulp, and half of the chopped herbs in a bowl. Coat the chicken thighs well with this marinade and refrigerate for 4 hours.

Once marinated, drain the chicken, reserving the marinade. Place the thighs on a baking sheet, removing any excess marinade. In a tagine or pot, sauté the chopped onion with the remaining marinade and add a glass of water. Bring to a boil, then simmer over low heat for about 25 minutes, until the onions are tender.

Then add the chicken thighs and a drizzle of olive oil. Cover and cook over low heat for about 1 hour. Remove the thighs and reduce the sauce until it reaches a syrupy consistency. Return the chicken to the tagine, add the olives, preserved lemon strips, and some chopped herbs.

Reheat everything over low heat until lightly caramelized. Serve the tagine piping hot.
